MAYO CAKE

1 cup sugar
2 cups flour
4 tbsp. cocoa
2 tsp. baking soda
pinch of salt
1 cup miracle whip
1 cup cold water
1 tsp. vanilla


mix well bake at 350 for 30-40 minutes.

This cake is moist and delicious.

 An old family recipe that everyone loves.

 

SHORTBREADS

1 cup butter
1/2 cup icing sugar
1/2 cup cornstarch
1 cup flour
1 tsp. vanilla

combine well
bake at 350 till very lightly golden approx. 8 mins
Very light they melt in your mouth

 

Bailey's

1 can eagle brand milk
1/2 pint whipping cream (not whipped)
3 eggs
31/2 tsp. chocolate syrup
3/4 tsp. almond extract

mix above ingredients
add 1 cup of whiskey
blend

A wonderful cup of holiday cheer.
Wonderful as a gift or to sip at home.

SKOR BARS

line cookie sheet with foil
place unsalted crackers in bottom of pan
lined up touching one another


1 cup butter
3/4 brown sugar

melt and bring slowly to a boil
boil for 3 minutes
 pour over crackers
bake at 350 for 5 minutes

1 large package of chocolate chips melted

spread over the base cut into cracker sized servings

 while still warm and refrigerate

These are to die for. I am not allowed to bake them

 and take them as a gift.

I get mugged before they leave the house!

 

BIG DIPPER SHRIMP

1 pkg. cream cheese softened
1/4 cup milk
1 can shrimp. drained and chopped
1 tbsp. finely chopped green onion
2 tsp. lemon juice
11/2 tsp. worcestershire sauce
1/2 tsp. salt
3 drops tobasco

beat until cheese is smooth, stir in milk.

fold in rest of ingredients

refrigerate for 4 hrs. before serving.

Very easy. Very good!!

 

MY FAMOUS DOUBLE CHOCOLATE CHEESECAKE

Crust:

1 cup crushed chocolate wafers (I use oreo cookie crumbs)
3 tbsp. butter, melted


Filling:
3 (8oz.,250 g) pkg. cream cheese softened
3/4 cup sugar
3 eggs
1 tsp. vanilla
3 squares Baker's white chocolate, melted
2 tbsp. raspberry or orange liqueur(optional)
3 squares Baker's semi-sweet chocolate, melted


Glaze:

6 squares Baker's semi-sweet chocolate
1/4 cup butter
2 tsp. vegetable oil


CRUST: Combine crumbs and butter; press firmly onto

 bottom of 9" springform pan. Bake at 350 for 10 minutes.

FILLING:IN food processor or with electric mixer,

 blend cream cheese and sugar. Add eggs, one at a time,

mix well after each addition. Add vanilla.

REMOVE half the batter to another bowl.

 stir melted white chocolate and liqueur into this portion.

 To remaining batter, blend in melted semi-sweet chocolate.

POUR dark batter into crumb lined pan;spread evenly.

Spoon white batter carefully over top;

 spread evenly. Bake at 425 for 10 minutes;

reduce heat to 250 and bake 30-35 minutes longer,

 or until center of cake is barely firm.

 Remove from oven and run knife around sides.

Let cool completely before removing from sides.


GLAZE:Melt chocolate with butter and oil over hot water,

 

,stirring until smooth. Place cake rack over waxed paper.

 pour glaze over entire cake. Bang rack several times

 to smooth glaze. If desired, garnish with chocolate curls.


It looks complicated but it really is quite easy to make.

 Freezes very very well. Definite crowd pleaser. Awesome!
